||Made from estate grown Cabernet Franc, hand harvested during the last days of October 2013.
||Crushed and de-stemmed to open top stainless steel fermenters, the grapes were inoculated with a Bordeaux yeast after a 24-hour cold soak.
||“On the skin” maceration lasted 14 days with the wine completing both alcoholic and malolactic fermentation during this stage.
||After pressing, the wine “tank settled” for 3 days and was then racked to French Oak barrels.
||In the Spring of 2014, the Cabernet Franc was pumped to tank for final blending and then returned to oak for two more years of aging.
