||Crushed and de-stemmed to a light press, the juice is then cold settled to clarity over 48 hours and inoculated with the French yeast Epernay II to highlight the inherent fruit aromas of the grapes.
||A long, slow cool fermentation, never exceeding 58°F, with minimal intervention through aging and bottling further maintains the depth of its berry flavors.
